1..2..3..4...Firstdown!

This weekend we were able to make it back to Purdue for a football game. Kellen and I usually like to get season or mini-season tickets but this year we aren't able to make it to that many. So we went all out on one of the few games we could attend! I went up Friday night with my parents to visit Cameron and take it him out to dinner and for groceries, then we spent the night at a hotel. Then Kellen and the rest of our tailgate crew (some girls I went to nursing school with and their husbands) met me there Saturday morning where we tailgated all day untill the night game. It was fun because even though we were mostly Boilers, there a few ND fans in our group, so it was fun rivalry all day. We even went to the Neon Cactus (a very popular piano bar up at Purdue) after game! The weather was pefect football weather! It was a fun weekend with family and friends...even though we didn't win it was still worth going up. As I mentioned in an earlier blog, I feel so lucky to be able to keep so close to Purdue.

This past week I have had a little bit of extra time since I am still only doing 8 hour shifts (I think I will return full time next week!).. so I have been trying some new recipes! I went to the farmer's market and picked up fresh produce and wanted to share the yumminess with you!

After Market... the beets were SO good

Roasted Veggies and Chicken Orzo

This one was definately a keeper! It was a recipe that my friend Bri gave me at my bridal shower. Kellen loved it so much he told me to thank her ;)

I hope you enjoy it as much as we did!

Ingredients:

Chicken Breasts

asparagus tips

2 lemons

yellow squash

S & P

2 cloves garlic

3 tsp oregano

8oz feta cheese

olive oil

fresh basil leaves

red pepper

toasted pine nuts

onion

1/2 lb orzo pasta

zuchini

Optional: sour cream, cucumber, dill for cucumber sauce

1. Marinate Chicken in olive oil, juice of 2 lemons, S & P, oregano. Cook on Grill.

2. Preheat oven to 375*. Cut up red pepper, onion, asparagus tips, and squashes. Stir veggies in 1/4 cup olive oil, 2 lg cloves of crushed garlic, S & P. Spread on pan and bake 30minutes, stirring often to desired doneness.
3. Tosss veggies, feta, 15 basil leaves, toasted pine nuts and orzo (prepared per package directions).

4. Serve with warmed pita bread and cucumber sauce (sour cream, minced cucumber, 1 tsp dill, S & P) Serves 4-6

This was another night... again I roasted some more veggies and tossed it with olive oil and the fresh lemon pepper pasta I got at Market.

Nostalgia

Last night at dinner, Kellen told me he was running up to Purdue at the last minute for work today. So guess what! I decided to go with him! :) He had to be at the site at 8am, so he dropped me off bright and early at the Union. I ate breakfast at my old spot I used to eat everyday! Then I walked around campus, reflected, and relived some of the greatest days of my life.

I ended my day with meeting my little brother Cameron for lunch at our favorite place on campus. I had one of the best days I've had in a while!

Summer Fun

As the days slowly get shorter and summer starts to wind down, I am reflecting on what an eventful summer Kellen and I have had together. It sure was full of ups and downs with the passing of my cousin, Jessica. She will forever be in our hearts. This experience has reminded me we never know when our time will come, and we need to cherish life. Here are few of the highlights of our summer life:

First Time's a Charm

Well hello! I finally did it, I started my first blog. Please bare with me as I am learning how this works! Although it seems like most people start their first blogs when their family is 'growing,' I thought I would start one before that... to share with our family and friends what fun Kel and I are up to before we are blessed with children. Perhaps this will give you a little insight as to what happenings the Heavins are up to :)
